Chicken Cheese Nuggets Recipe

These chicken cheese nuggets are aromatic, bursting with melted cheese. You just can’t stop popping one after another until all are gone!

Why Does This Recipe Work?

Moist and soft: Adding one slice of bread keeps the chicken mince soft and juicy after frying and retains the moisture.

Seasoning: The Italian herbs make the chicken aromatic. These herbs add a savory scent that is a tempting sensory delight.

Kid-Approved: The cheese oozing from these hot balls is irresistible and a favorite for children. This gooey, melted center makes the snack fun to eat and a guaranteed hit with the little ones.

Ingredients:

Just a few simple items are all it takes to prep these easy, homemade chicken nuggets. Below are the ingredients to marinate the ground chicken.

  • Ground Chicken: I use ground chicken breast for these nuggets, but you can also use a mix of breast and thigh for extra flavor. (Tip: If you have whole boneless pieces at home, pulse them in a food processor until they are finely ground and ready for seasoning.)
  • Bread: Basic store-bought white bread or sandwich bread acts as the perfect binder for the chicken mixture.
  • Milk: I used milk to soak the slice of bread and soften it before mixing it into the mince. You can use water as well.
  • Seasoning:  I used paprika, garlic powder (or garlic paste), chicken powder, Italian seasoning, chili flakes, black pepper, and salt. If you prefer less heat, you can skip red chili flakes.

Here are the ingredients you'll need for the cheese filling and a super crispy nugget coating.

  • Cheddar Cheese: I used cheddar here, but any cheese that melts well, like mozzarella, Gouda, or Monterey Jack will work perfectly for these nuggets.
  • Flour: Use any flour you have in hand, like plain flour, cornflour, or rice flour.
  • Egg: If looking for a vegan option, use cornflour slurry to dip the potato balls, then roll in bread crumbs.
  • Breadcrumbs: Use panko for best results.

HOW TO MAKE IT?

Proper rolling is the secret to keeping the cheese inside the nugget and your oil clean. Follow my step-by-step photos to see exactly how it's done!

1 to 4 steps to make the chicken cheesy balls.
  1. In a mixing bowl, soak the bread in milk until soft, mash it into a smooth paste, and then add the ground chicken and seasonings.
  2. Mix thoroughly and refrigerate for 20 minutes to make the mixture firm enough to be pliable. Meanwhile, cut the cheese into 30 small cubes (about ¾-inch each) and set aside.
  3. Apply a little oil to your hands and take a small portion of the minced meat. (Pro-tip: Use a spoon or a cookie scoop to divide the mince equally.) Place a cheese cube in the center and press it into the meat, then pull the sides over to hide the cheese cube completely. Roll it into a ball.
  4. Repeat the entire process to form the 30 chicken balls. If they are difficult to handle, you can chill them in the fridge for 15 to 20 minutes before starting the coating process.
  1. Roll each chicken ball in flour.
  2. Beat the egg with a pinch of salt and pepper. Roll each ball in the egg mixture carefully.
  3. Coat the balls in breadcrumbs and shape them properly. Watch Video.
  4. Deep fry the balls in small batches in 2-inch deep oil on medium heat.
  5. Or you can air-fry them. To air-fry, preheat the air fryer to 180°C and lightly spray the nuggets with oil. Air-fry for 10 to 12 minutes, then serve hot.

EXPERT TIPS

  • Firm Up the Mixture: Chill the ground chicken in the refrigerator before rolling to make it firmer and easier to handle.
  • Add Breadcrumbs: If the mixture remains difficult to handle after chilling, mix in 1–2 tablespoons of breadcrumbs to improve the pliability.
  • Grease Your Hands: Lightly coat your palms and fingers with oil before rolling. Reapply the oil as needed to prevent sticking.
  • Seal the Cheese Completely: Be extra careful while forming the balls. Ensure the chicken covers the cheese entirely to prevent it from leaking during the cooking process.
  • Monitor Leaks: If cheese begins to ooze, it usually happens toward the end of cooking when the chicken is done. Remove the balls immediately; a little leakage is harmless.
  • Optimize Cooking Time: Fry the balls for 4–5 minutes to ensure the chicken is thoroughly cooked and the cheese is perfectly melted.
  • Serve While Hot: These nuggets are best enjoyed immediately while the cheese is gooey. If they cool down, reheat them in an air fryer or oven to restore the crunch and melt the center.

VARIATIONS

Cheese Variations: Experiment with different types of cheese for the center to change the flavor profile. Try using cottage cheese (paneer), Gouda, or mozzarella cheese.

Seasoning Variations: Ground chicken is versatile; try using your favorite meatball seasoning or other blends like taco, tikka, or Asian-style spices.

Texture Adjustment: For a softer texture similar to keema cutlets, add extra soaked bread and an additional pinch of chili flakes to the mixture.

HOW TO STORE?

Once the cheesy nuggets are ready, put them in a baking tray in the freezer and freeze for 1-2 hours until solid. Then store in zip-lock plastic bags or in an airtight container with layers of plastic or butter paper in between.

HOW TO SERVE?

The Perfect Dip: A dipping sauce is essential for these nuggets. They pair beautifully with ranch or French dressing. For those who prefer a bit of heat, sweet chili sauce also tastes great.

Make A Sandwich: Turn these nuggets into a meal by placing them in a toasted bun or sliced bread. Add lettuce, tomato, and your favorite sauce for a quick, crispy chicken sandwich.

How do I keep the breading crispy?

For a crunchier crust and better frying, dip the nuggets in the egg and breadcrumbs twice, and don't crowd too many in the pan at once.

Chicken Cheese Nuggets Recipe

Ingredients

For Chicken

  • 1 bread slice
  • 2 tablespoons milk, or water to soak
  • 450 gm ground chicken

Seasoning

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder, sub with garlic paste
  • 1 teaspoon chicken powder
  • ½ teaspoons Italian seasoning
  • ½ teaspoons chilli flakes, skip for non spicy.
  • ½ teaspoon pepper
  • ½ teaspoon salt

For Coating

  • 100 gm cheddar cheese, or any melting cheese like mozzarella, at room temperature
  • 2 tablespoons flour
  • 1 egg
  • Bread crumbs, for coating
  • Oil, to fry

Instructions

  • Soak the bread in milk, mash it into a thick paste.
  • In a bowl, combine ground chicken, mashed bread and all the ingredients in the seasoning list. Mix well.
  • Next, chill the mixture for 20 minutes in fridge.
  • Meanwhile, cut the block of cheese into thirty cubes of about ¾ inch.

Rolling

  • Grease your palm and fingers with oil. Scoop a small portion of chicken mixture, then press a cheese cube into the center. Pull the sides upward to form a ball. Make sure to cover the cheese cube completely with the chicken mixture.
  • Repeat to make about 30 nuggets.
  • Roll all the chicken cheese nuggets in flour until they are evenly dusted.
  • Whisk an egg with salt and pepper, then dip each ball to coat it thoroughly.
  • Toss the balls in breadcrumbs, pressing gently to secure the coating and refine the shape.
  • Deep-fry the balls in small batches in 2-inch deep oil on medium heat.
  • Or air-fry at 180°C for 10 to 12 minutes after a light oil spray until golden.

Expert Tips

  • Firm Mixture: Chill the mince before rolling to firm it up. If it stays sticky, mix in 1–2 tablespoons of breadcrumbs and keep your hands lightly greased with oil.
  • Seal: Ensure the cheese is completely covered with ground chicken to prevent leaks. If cheese starts to ooze during frying, the nuggets are likely done, remove them immediately.
  • Cooking & Serving: Fry for 4–5 minutes for a golden crunch. Serve immediately while the cheese is molten; reheat in an air fryer to restore crispness.
