What Makes This Recipe Stand Out?

Flavor booster: Adding a bit of chili and a touch of garlic gives you the best flavor.

Texture: A small addition of finely chopped onions and bell peppers adds a delightful crunch and enhances the overall texture of the nuggets.

Savory Cheesy: To finish it off, some cheese is included for a delicious savory kick, making this the perfect recipe for a fried corn nugget appetizer.

Ingredients

Simple ingredients come together and make such a delicious and healthy snack.

Image of ingredients to make corn nuggets.
  • Corn: Use fresh, frozen, or canned sweet corn kernels for this recipe. If using canned, make sure to drain it well.
  • Flour: I used plain all-purpose flour, which gives structure to the corn nuggets.
  • Egg: This serves as the primary binder, helping keep the nuggets intact.
  • Milk: I used full-fat milk; you can use half milk and half cream.
  • Bell pepper& Onion ( optional): These finely chopped aromatics provide a fresh crunch and a savory depth that balances the sweetness of the corn.
  • Cheese(optional): I used shredded mozzarella cheese for this recipe, but you can easily substitute it with cottage cheese or halloumi. I also tried this recipe with cheddar cheese, but cheddar melts in oil, creating a brown, lacy structure. Hence, cheese with a high melting point works best.
  • Seasoning: A blend of garlic powder, baking powder, red chili flakes, sugar, salt, and Italian seasoning gives these nuggets a savory kick and a fragrant aroma. Can substitute sugar with honey.
  • Butter: Keeps it moist and flavorful.
  • Oil: Use any neutral-flavored oil like peanut oil, canola oil or corn oil that have high smoke point.

How To Make It?

Let's begin making an easy corn nugget recipe.

Cooking steps collage to make corn fritters.
  1. Take flour in a large mixing bowl.
  2. Add the egg, butter, and seasonings. Mix these ingredients until the mixture reaches a crumbly texture.
  3. Gradually pour milk into the dry ingredients. Mix until combined. (Do not overmix the batter or tough gluten strands can form.)
  4. Allow the batter to rest for 5 to 7 minutes.
Cooking steps to make the nuggets.
  1. Add the sweet corn, shredded mozzarella, finely chopped onions, and green bell peppers to the rested batter. Pro tip: Adding veggies just before frying ensures the batter doesn't get soggy.
  2. Gently mix the ingredients until the corn and vegetables are evenly distributed.
  3. Heat oil in a deep pan. Once the oil is hot, reduce the heat to medium. Using a small cookie scoop, carefully drop portions of the corn nugget batter into the hot oil. Pro-Tip: You can use two spoons for frying. Use one to scoop the batter and a second spoon to push the batter into the oil.
  4. Fry until they are crisp and golden brown on all sides. Use a slotted spoon to remove nuggets from oil. Drain on paper towels and serve immediately.
Pro-Tip: These are best enjoyed fresh! If you have leftovers, reheat them in an air fryer or oven for a few minutes to bring back crispiness.

Expert Tips:

The Two-Spoon Technique: For the best results, use two spoons to drop the batter into the oil. Scoop the batter with one and use the other to push it off smoothly. This keeps the process fast and your hands mess-free.

Perfect Frying Heat: Deep fry in hot oil, but ensure you maintain a steady medium heat. This allows the nuggets to cook through to a fluffy center while achieving a crisp, golden-brown exterior without burning.

The Taste Test: Fry one "test" corn ball first. Taste it to check the flavor balance, then adjust the salt or seasonings in your remaining batter if needed before frying the rest of the batch.

Dipping Sauces: Serve these hot to enjoy the ultimate crunch. They pair perfectly with a cool ranch dip or a sweet chili sauce, and spicy sriracha mayo also tastes splendid.

Variations

I have tested many variations of this recipe before settling on this final version. Here are a few ways you can customize it to your liking:

  • Protein: For a heartier snack, feel free to add shredded chicken or your choice of cooked meat to the batter.
  • Herbs: Enhance the fresh aroma by incorporating chopped green onions, cilantro, or dried Italian seasonings.
  • Heat: If you prefer a bit of a kick, spice things up with finely chopped green chilies or jalapeños.

Storage

Store leftover nuggets in an airtight container. Place a paper towel at the bottom of the container to absorb any moisture. They stay good in the refrigerator for 3 to 4 days, or you can freeze the leftover nuggets for up to 2 or 3 months. Just air-fry them until hot and crispy.

FAQS

Why are my corn nuggets soggy?

The oil likely wasn't hot enough, or the batter was too wet. Ensure oil is around and drain any liquid from the corn before mixing.

How to prevent them from falling apart while frying?

If this happens, add a little flour to the remaining batter to thicken it. This prevents the batter from falling apart.
