This delicious Ice lolly recipe will become your family favourite and you’ll keep making more and more lollies in summer. This is irresistibly yummy treat.

While the slow merge of colour makes it very tempting, honestly blending so many fruit can be bit demanding. So I suggest, making combos of two fruit for convenient efforts.

The Ice lolly recipe is so simple there is hardly anything to share. It just fruit pulp basically. Since, my blender needed a little water so I added some water and sugar. I’m also adding little lemon juice for that tarty kick you expect in ice lolly.

While, I preferred adding sugar because kids like it sweet. Or they’ll say homemade lolly is not good and insist to get store bought stuff.
So sweeter lolly with real fruit and no artificial chemicals is win win situation for me.

Tip

  • While making ice lolly is super simple , making an ice lolly with so many colours is tricky.
  • Make sure your fruit pulp is thick so it doesn’t merge together and stay separate in layers.
  • I chill all fruit pulp for 30 minutes in freezer before layering in mould. This make pulp even thicker and less likely to merge.
  • You can avoid sugar and lemon to make it healthier.
  • Lastly, do not use aluminium or aluminium alloy moulds (kulfi moulds) to make this lolly. Lemon juice (acid) react with aluminium and can cause nausea and upset stomach.
  • So use only stainless steel or plastic moulds.

Equipment

  • 6 lollipop moulds

Ingredients

Yellow pineapple syrup

  • ¾ cup pineapple
  • 1 tablespoon sugar, avoid sugar if using canned pineapple
  • ½ tablespoon lemon juice
  • Water or Pineapple juice (from tin to blend)

Green Grapes syrup

  • 1 cup grapes
  • 1 tablespoon sugar
  • ½ tablespoon lemon juice

Orange Peach Syrup

  • 1 peach, deseeded
  • 1 tablespoon sugar
  • ½ tablespoon lemon juice
  • Little water to blend

Red plum syrup

  • 2 plums, deseeded
  • 1 tablespoon sugar
  • Little water to blend

Instructions

Yellow Pineapple syrup

  • Mix all the ingredients in list and blend together until smooth and keep in freezer to chill for 30 minutes.

Green Grape syrup

  • Mix all the ingredients in list and blend together until smooth and keep in freezer to chill for 30 minutes.

Orange Peach Syrup

  • Mix all the ingredients in list and blend together until smooth. Use as little water as possible to blend. Keep in freezer to chill for 30 minutes.

Red Plum Syrup

  • Mix all the ingredients in list and blend together until smooth. Use as little water as possible to blend. Keep in freezer to chill for 30 minutes.

Assemble

  • Fill plum syrup in each mould.
  • Now, peach syrup slowly without mixing.
  • Then fill pineapple syrup followed by grape syrup.
  • Place the sticks in the mould and fix the lids.
  • Freeze for 12 hours or overnight.
  • Dip each mould in warm water to release the lollipop from sides. Then carefully remove from mould and serve immediately.
