Consider mixing sweet and tart varieties of fruit for best tasting jam. Always use seasonal fully ripened and firm fruit for a pectin-free jam. Because firm fruit is high in pectin and sets better.
Lastly, mix fruit and sugar ahead and let it rest overnight to macerate. This helps the jam setting better and quicker without a very stewed taste.
