    Smoky Chicken Rice

    Step by step recipe of Smoky chicken and seasoned rice with tomato basil sauce. That’s the kind of recipe I love to post. Why? Every bite gives you a mouth full of flavors. The crunch of veggie, the smoky flavor that hits the palate, and the tomato sauce blending all flavors. I love to have this with almond soup.

    I can take full credits of the recipe. Although, it was inspired by my sister-in-law. I have made this smoky chicken and seasoned rice dish for ten years and I have shared this recipe hundreds of times with many friends over the year and today it find its way to the blog.

    What makes this rice dish special is the smoky chicken. The ingredients are easy to find. The original recipe had Russian sauce. To cut down oil in mayonnaise, I’ve added tomato puree, basil, and oil. This tomato sauce is so yummy and can be used as a topping in other rice dishes too. Hubby, kids, friends, everyone loves this rice dish. You can make tomato sauce and chicken a day ahead because although it is simple preparing different layers takes some time. You can also adjust vegetables to your choice. I always add only green vegetables so it contrast with the red sauce.

    Step by step recipe

    For Smokey Chicken

    Put chicken pieces, ginger garlic paste, pepper and oil in a pot.

    Cook on low heat for 10 minutes.

    When chicken is tender add butter and soya sauce. Also dry out any excess water by cooking on high flame.

    Add coconut milk powder.

    Smoke the chicken by placing a piece of red hot coal on foil in the centre of pot. Drip few drop of oil on coal and immediately cover the lid. Chicken is ready, it should have a nice buttery, spicy and smokey flavour.

    For veggie Sauce

    Mix all ingredients of veggie and mayonnaise.

    For Tomato Basil Sauce

    Put all ingredients of sauce in the blender that is tomato puree, ketchup, chilli garlic sauce, chilies and capsicum, salt and oil.

    Blend into a smooth liquid.

    Transfer sauce in a pot, add dry basil.

    Cook for 2 minutes. Sauce is ready.

    For Rice

    Wash and soak rice for ten minutes in a bowl.

    In a large pot boil water with salt. Add rice to boiling water pot and cook for 7-10 minutes until 80% cooked. (1 Kani chawal) When ready drain water in a strainer and set aside.

    To prepare seasoning for rice add all seasoning ingredients that is desiccated coconut, soy sauce, oil, chicken cube, vinegar in pot and heat to sizzle for 1 minute on medium flame.

    Now add sugar. Add 2 tablespoons of water so seasoning easily gets mixed in rice.

    Add half rice first in the seasoning. Mix well and then add the remaining rice and mix again. Mix lightly do not break the rice.

    For Serving

    The recipe makes two plates of rice. Take rice on a plate. Add layers of chicken a veggie as in picture. Then pour tomato basil sauce. Enjoy!

    Ingredients

    For smoky chicken

    • 600 grams chicken, cut in small pieces
    • 1 tablespoon oil
    • 2 tablespoon ginger garlic paste
    • 1 tablespoon soy sauce
    • 1 teaspoon white pepper powder
    • 2 tablespoon butter, salted
    • 2 tablespoon coconut powder
    • 1 piece of charcoal

    For tomato basil sauce

    • 1 ½ cup tomato puree
    • ½ cup chilli garlic sauce
    • ½ cup ketchup
    • ½ cup oil
    • 1 capsicum
    • 3 green chillies
    • 4-5 garlic cloves
    • 1 teaspoon dry basil leaves
    • salt , to taste

    For veggie sauce

    • ½ cup mayonnaise
    • 1 teaspoon mustard sauce
    • 1 cup shredded cabbage
    • 1 cup chopped capsicum
    • ½ cup chopped green onion
    • 2 tablespoon chopped green chillies

    For Rice

    • 2 cups (400 grams) rice
    • Water to boil
    • salt, to taste

    Rice Seasoning

    • 1 tablespoon oil
    • 1 chicken cube
    • 1 tablespoon soy sauce
    • 1 tablespoon desiccated coconut
    • 1 tablespoon vinegar
    • 1 tablespoon sugar

    Instructions

    For Smokey Chicken

    • Cook chicken with oil, ginger garlic paste and white pepper for 7 minutes. When chicken is tender, add butter, soy sauce and coconut powder. Dry excess water, if any.
    • Smoke chicken with a piece of red coal and few drops of oil. Chicken is ready.

    For Tomato Basil sauce

    • Mix all ingredients of tomato basil sauce and blend into a smooth liquid.
    • Bring sauce to a boil and simmer for two minutes. Sauce is ready.

    For veggie sauce

    • Mix all ingredient of veggie sauce together and set aside.

    For Rice

    • Soak rice for 10 minutes.Then boil rice with salt until 80% cooked (1 kani). Strain rice and drain all water and set aside.
    • In the same rice skillet, heat oil, chicken cube, soy sauce, desiccated coconut and vinegar.Then add sugar. Now, add half rice. Mix lightly and carefully. Do not break the rice.  Finally, add remaining rice and mix well.
    • Heat the rice on low flame with lid covered (dum) for about 7 minutes until steam is visible when lid is removed.

    Assembling:

    • Make sure chicken, sauce, and rice all are hot at the time of serving. The recipe makes two plates of rice.
    • Fill rice in a large plate. Add smoky chicken in the center leaving the sides for vegetable sauce.
    • Now fill the sides of rice with vegetables sauce and finally pour tomato sauce on the rice.

        Hi Tahera, these are lightly spiced rice but very flavorful. I personally would like to pair it with these soups.

      I tried it today. .it was just superb...thankyou Mariam apa ...your recipe was perrfect. I just did a small change ..added fresh basil leaves in the sauce which gave a more stronger flavor of basil ♡
