Ingredients to make the crispy chicken pakora.

Cut the chicken into bite-sized pieces and add baking soda to it. Let it rest for 4 to 5 minutes, then thoroughly wash the chicken. Then let the excess water drain in the colander.
In a bowl, combine the gram flour, rice flour, onion, lemon juice, and spices. Stir the ingredients until they are well combined.
Add water( I used ¾ cup) gradually to the dry mixture, making sure not to add too much. The batter should not be too runny.
To the pakora batter, add the chicken cubes, Make sure the chicken cubes are dry before adding them to the batter. This will help the batter to adhere to the chicken.
Gently fold the chicken pieces into the pakora batter until evenly coated. Use your hands to ensure complete coverage, if needed.
Heat oil in a wok or kadhai over medium heat and fry chicken pakoras in batches for 2-3 minutes per side, or until golden brown and crispy.
Carefully remove the golden-brown pakoras from the hot oil with a slotted spoon and place them on a paper towel-lined plate to drain.
Once the pakoras are drained, sprinkle them generously with chat masala and serve immediately. The chat masala will add a delicious tangy, savory, and spicy flavor to the pakoras.
