Shahi Tukda

This is a quick and easy recipe for your sweet tooth that tastes heavenly, can be served warm or cold.

Ingredients

  • 4 cup milk
  • ¾ cup sugar or to taste
  • 1 cup milk powder
  • ½ teaspoon cardamom seed removed and crushed.
  • 1 pinch saffron (substitute saffron with more ¼ teaspoon cardamom powder and a pinch of yellow food color)
  • 4 large slices of bread , preferably slightly stale.
  • oil or ghee to shallow fry
  • pistachio and almonds for garnish

Instructions

  • Heat 3 and ½ cup milk in a wide pan. Add sugar, cardamom, saffron and milk powder.
  • Fry the bread in oil or ghee on low flame until crispy golden.
  • Dry excess oil on kitchen towel. Place fried bread on a dish.
  • Cook milk syrup for 30 minutes until thick and deep yellow.
  • Pour thick yellow milk syrup(running consistency) on bread and bake on 350 F for 7-10 minutes, until bread puffs up and syrup boils. (You can also heat in microwave until bubbling hot, about two minutes.)
  • Garnish with roasted pistachios and almonds.

Notes

Method 1( For shahi tukray in pan): Put fried breads in yellow milk syrup and simmer for 10 minutes on very low heat until milk thickens and bread soaks the syrup. Shahi tukray is ready to serve.
